Ingredients:
- 1–2 tablespoons olive oil
- 1 pound ground beef, turkey, or plant-based meat
- 1 medium onion, diced
- 2–3 garlic cloves, minced
- 1 green bell pepper, diced
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 can (6 oz) tomato paste
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans or pinto beans, drained and rinsed
- 1 cup beef, chicken, or vegetable broth (adjust for desired thickness)
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper (optional, for heat)
- Salt and black pepper, to taste
- Optional toppings: shredded cheese, sour cream, diced avocado, green onions, or tortilla chips
Instructions:
-
Heat the Pot:
In a large pot or Dutch oven, heat olive oil over medium heat. -
Cook the Meat:
Add the ground meat to the pot and cook, breaking it into smaller pieces, until browned. Remove excess fat if necessary. -
Sauté Vegetables:
Add the diced onion, garlic, and green bell pepper to the pot. Cook for 3–5 minutes, stirring occasionally, until softened and fragrant. -
Add Tomatoes and Beans:
Stir in the diced tomatoes (with juice), tomato paste, drained beans, and broth. Mix well. -
Season the Chili:
Add chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and black pepper. Adjust the seasoning to taste. -
Simmer the Chili:
Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot partially and let it simmer for 30–45 minutes, stirring occasionally. This allows the flavors to meld together. -
Adjust Consistency:
If the chili is too thick, add more broth or water. If it’s too thin, let it simmer uncovered for a few minutes until it thickens. -
Taste and Adjust:
Before serving, taste the chili and adjust the seasoning with additional salt, pepper, or spices as needed. -
Serve:
Ladle the chili into bowls and top with your favorite garnishes like shredded cheese, sour cream, diced avocado, or crushed tortilla chips. Serve with warm cornbread or crackers on the side.
