Ingredients
- 2 pounds chicken wings (drumettes and flats)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup all-purpose flour (optional for extra crispiness)
- Vegetable oil (for frying)
Buffalo Sauce:
- 1/2 cup hot sauce (e.g., Frank’s RedHot)
- 1/4 cup unsalted butter
- 1 tablespoon honey or brown sugar (optional, for a slight sweetness)
- 1 teaspoon Worcestershire sauce (optional, for depth of flavor)
For Serving:
- Celery sticks
- Blue cheese or ranch dressing
Instructions
Step 1: Prep the Chicken
- Pat the chicken wings dry with paper towels.
- Toss them in a bowl with salt, pepper, garlic powder, and flour (if using).
Step 2: Fry the Wings
- Heat about 2 inches of vegetable oil in a deep skillet or fryer to 375°F (190°C).
- Fry the wings in batches for 8–10 minutes, until golden brown and crispy. Avoid overcrowding the pan.
- Remove the wings and place them on a plate lined with paper towels to drain excess oil.
Step 3: Make the Buffalo Sauce
- In a small saucepan, melt the butter over medium heat.
- Stir in the hot sauce, honey (or brown sugar), and Worcestershire sauce. Simmer for 2–3 minutes, then remove from heat.
Step 4: Toss and Serve
- Transfer the cooked wings to a large mixing bowl. Pour the buffalo sauce over the wings and toss until evenly coated.
- Serve immediately with celery sticks and blue cheese or ranch dressing.
Optional Baking Method:
- Preheat the oven to 425°F (220°C).
- Place seasoned wings on a baking rack over a foil-lined baking sheet.
- Bake for 40–45 minutes, flipping halfway, until crispy.
- Toss in buffalo sauce before serving.
