Ingredients

  • 2 pounds chicken wings (drumettes and flats)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup all-purpose flour (optional for extra crispiness)
  • Vegetable oil (for frying)

Buffalo Sauce:

  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 1/4 cup unsalted butter
  • 1 tablespoon honey or brown sugar (optional, for a slight sweetness)
  • 1 teaspoon Worcestershire sauce (optional, for depth of flavor)

For Serving:

  • Celery sticks
  • Blue cheese or ranch dressing

Instructions

Step 1: Prep the Chicken

  1. Pat the chicken wings dry with paper towels.
  2. Toss them in a bowl with salt, pepper, garlic powder, and flour (if using).

Step 2: Fry the Wings

  1. Heat about 2 inches of vegetable oil in a deep skillet or fryer to 375°F (190°C).
  2. Fry the wings in batches for 8–10 minutes, until golden brown and crispy. Avoid overcrowding the pan.
  3. Remove the wings and place them on a plate lined with paper towels to drain excess oil.

Step 3: Make the Buffalo Sauce

  1. In a small saucepan, melt the butter over medium heat.
  2. Stir in the hot sauce, honey (or brown sugar), and Worcestershire sauce. Simmer for 2–3 minutes, then remove from heat.

Step 4: Toss and Serve

  1. Transfer the cooked wings to a large mixing bowl. Pour the buffalo sauce over the wings and toss until evenly coated.
  2. Serve immediately with celery sticks and blue cheese or ranch dressing.

Optional Baking Method:

  • Preheat the oven to 425°F (220°C).
  • Place seasoned wings on a baking rack over a foil-lined baking sheet.
  • Bake for 40–45 minutes, flipping halfway, until crispy.
  • Toss in buffalo sauce before serving.
