Chicken and Broccoli Casserole: 


Ingredients* 

- **2 cups** cooked chicken, shredded or diced  

- **2 cups** fresh or frozen broccoli florets (lightly steamed if fresh)  

- **1 cup** cooked rice (optional for a heartier dish)  

- **1 can** (10.5 oz) cream of mushroom or cream of chicken soup  

- 1 cup** sour cream (or plain Greek yogurt for a lighter option)  

- 1 cup** shredded cheddar cheese (plus extra for topping)  

- 1/2 cup** milk  

- 1/2 teaspoon** garlic powder  

- 1/4 teaspoon** onion powder  

- Salt and pepper** to taste  

- 1/2 cup** breadcrumbs or crushed crackers (for topping)  

- 2 tablespoons** melted butter  



Instructions 


1. Preheat the oven: 

   Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.  


2. Prepare the base:  

   In a large mixing bowl, combine the cream of soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until smooth.  


3. Add the main ingredients:

   Fold in the cooked chicken, broccoli, cooked rice (if using), and 1 cup of shredded cheddar cheese. Mix until everything is evenly coated.  


4. Assemble the casserole: 

   Transfer the mixture into the prepared baking dish, spreading it out evenly.  


5. Top it off: 

   Sprinkle extra shredded cheddar cheese over the top. In a small bowl, mix the breadcrumbs or crushed crackers with the melted butter. Sprinkle this mixture over the cheese.  


6. Bake:  

   Place the dish in the preheated oven and bake for 25–30 minutes, or until the casserole is bubbly and the topping is golden brown.  


7. Serve:  

   Remove from the oven and let it cool for 5 minutes before serving. Enjoy!

- Diced cooked bacon for extra flavor  

- Sautéed mushrooms or onions  

- A pinch of red pepper flakes for heat
