Ingredients:

  • For the Marinade:

    • 1/3 cup soy sauce
    • 1/3 cup olive oil
    • 2 tablespoons red wine vinegar
    • 2 tablespoons Worcestershire sauce
    • 2 tablespoons lemon juice
    • 3 garlic cloves, minced
    • 2 teaspoons Dijon mustard
    • 1 teaspoon dried oregano
    • 1 teaspoon black pepper
    • 1/2 teaspoon salt
    • Optional: 1 teaspoon crushed red pepper flakes for a spicy kick
  • For the Meat:

    • 1.5–2 pounds of London Broil (top round steak or flank steak)

Instructions:

  1. Prepare the Marinade:

    • In a medium bowl, whisk together soy sauce, olive oil, red wine vinegar, Worcestershire sauce, lemon juice, garlic, mustard, oregano, salt, and pepper.
    • Taste and adjust seasoning if necessary.
  2. Marinate the Steak:

    • Place the London Broil in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the steak, ensuring it’s well-coated. Seal the bag or cover the dish with plastic wrap.
    • Marinate in the refrigerator for 4-12 hours (overnight is best for maximum flavor). Flip the steak halfway through marinating.
  3. Cook the Steak:

    • Preheat your oven to 450°F (230°C) and switch the broiler on high.
    • Remove the steak from the marinade, letting excess marinade drip off. Pat the steak dry with paper towels to encourage browning.
    • Heat a large oven-safe skillet (like cast iron) over medium-high heat. Add a bit of oil and sear the steak for 2 minutes per side until browned.
  4. Broil:

    • Transfer the skillet to the oven and broil for 4-6 minutes per side, depending on your desired level of doneness. Use a meat thermometer to check the internal temperature:
      • Rare: 125°F (52°C)
      • Medium Rare: 135°F (57°C)
      • Medium: 145°F (63°C)
  5. Rest and Slice:

    • Remove the steak from the oven, tent it loosely with foil, and let it rest for 10 minutes. This allows the juices to redistribute.
    • Slice the steak thinly against the grain for tender bites.
  6. Serve:

    • Serve with your favorite side dishes like roasted vegetables, mashed potatoes, or a fresh salad. Enjoy!
