Ingredients

For the meat sauce:

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 lb (450g) ground beef or Italian sausage (or a mix of both)
  • 1 can (28 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • 1 tsp sugar (to balance acidity)

For the ricotta mixture:

  • 2 cups ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
  • Pinch of salt and pepper

For layering:

  • 12 lasagna noodles (regular or oven-ready)
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the Meat Sauce:

    • Heat olive oil in a large skillet over medium heat. Sauté the onions until soft, about 3-4 minutes. Add garlic and cook for 1 minute.
    • Add ground beef/sausage and cook until browned. Drain excess fat if needed.
    • Stir in crushed tomatoes, tomato paste, basil, oregano, red pepper flakes, sugar, salt, and pepper. Let simmer on low for 20-25 minutes, stirring occasionally.
  2. Cook the Noodles (if using regular lasagna noodles):

    • Boil noodles in salted water according to package instructions. Drain and set aside.
  3. Prepare the Ricotta Mixture:

    • In a bowl, combine ricotta cheese, Parmesan, egg, parsley, salt, and pepper. Mix until smooth.
  4. Assemble the Lasagna:

    • Preheat oven to 375°F (190°C).
    • Spread a thin layer of meat sauce on the bottom of a 9x13-inch baking dish.
    • Place a layer of noodles over the sauce. Spread 1/3 of the ricotta mixture over the noodles, then sprinkle with 1/3 of the mozzarella. Add a layer of meat sauce.
    • Repeat this process for two more layers, finishing with a generous layer of meat sauce and mozzarella on top. Sprinkle Parmesan cheese over the final layer.
  5. Bake the Lasagna:

    • Cover the dish with aluminum foil (avoid letting it touch the cheese). Bake for 25 minutes.
    • Remove the foil and bake uncovered for another 15-20 minutes, or until the cheese is bubbly and golden.
  6. Rest and Serve:

    • Let the lasagna rest for 10-15 minutes before slicing. Serve warm and enjoy!
