Classic Lasagna Recipe

Ingredients
For the meat sauce:
- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 lb (450g) ground beef or Italian sausage (or a mix of both)
- 1 can (28 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional, for heat)
- Salt and black pepper to taste
- 1 tsp sugar (to balance acidity)
For the ricotta mixture:
- 2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tbsp fresh parsley, chopped (or 1 tsp dried parsley)
- Pinch of salt and pepper
For layering:
- 12 lasagna noodles (regular or oven-ready)
- 3 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions

Prepare the Meat Sauce:
- Heat olive oil in a large skillet over medium heat. Sauté the onions until soft, about 3-4 minutes. Add garlic and cook for 1 minute.
- Add ground beef/sausage and cook until browned. Drain excess fat if needed.
- Stir in crushed tomatoes, tomato paste, basil, oregano, red pepper flakes, sugar, salt, and pepper. Let simmer on low for 20-25 minutes, stirring occasionally.

Cook the Noodles (if using regular lasagna noodles):
- Boil noodles in salted water according to package instructions. Drain and set aside.

Prepare the Ricotta Mixture:
- In a bowl, combine ricotta cheese, Parmesan, egg, parsley, salt, and pepper. Mix until smooth.

Assemble the Lasagna:
- Preheat oven to 375°F (190°C).
- Spread a thin layer of meat sauce on the bottom of a 9x13-inch baking dish.
- Place a layer of noodles over the sauce. Spread 1/3 of the ricotta mixture over the noodles, then sprinkle with 1/3 of the mozzarella. Add a layer of meat sauce.
- Repeat this process for two more layers, finishing with a generous layer of meat sauce and mozzarella on top. Sprinkle Parmesan cheese over the final layer.

Bake the Lasagna:
- Cover the dish with aluminum foil (avoid letting it touch the cheese). Bake for 25 minutes.
- Remove the foil and bake uncovered for another 15-20 minutes, or until the cheese is bubbly and golden.

Rest and Serve:
- Let the lasagna rest for 10-15 minutes before slicing. Serve warm and enjoy!
